Black cod

Anoplopoma fimbria

Black Cod, belonging to the scorpion fish and flatheads family, shares no relation with Cod despite its name. This fish is also known internationally as Sablefish and can reach a length of 120 centimeters and a weight of 55 kilograms, able to swim depths of up to 2700 meters. Smaller species of Black Cod are typically found closer to the coast, while larger ones are found in the deeper parts of the ocean. The fish is typically frozen directly onboard

Black Cod is prized for its delicate flavor and high fat content. Its fillet is creamy white and lends itself well to drying, salting, smoking, cooking, grilling, and frying.
